Earl Grey Tea Loaf

Here is the recipe that features on my weekly vlog, The Shawpits Diaries. Head over there for the method, but here are the ingredients:

  • 250g prunes
  • 250ml hot Earl Grey tea

Steep overnight.

  • 1 egg
  • 250g plain flour
  • 1tsp baking powder
  • 150g soft brown sugar
  • Zest of 1 lemon (preferably a bergamot lemon)

Mix the dry ingredients gently in to the soaked prunes and pour in to a 2lb greased and lined loaf tin. Bake at 150℃ for 1-1.5 hours until cooked. Allow to cool for half an hour or so before turning out and leaving to get cold.

Serve sliced and buttered.
