Here is the recipe that features on my weekly vlog, The Shawpits Diaries. Head over there for the method, but here are the ingredients:
- 250g prunes
- 250ml hot Earl Grey tea
Steep overnight.
- 1 egg
- 250g plain flour
- 1tsp baking powder
- 150g soft brown sugar
- Zest of 1 lemon (preferably a bergamot lemon)
Mix the dry ingredients gently in to the soaked prunes and pour in to a 2lb greased and lined loaf tin. Bake at 150ā for 1-1.5 hours until cooked. Allow to cool for half an hour or so before turning out and leaving to get cold.
Serve sliced and buttered.
